Teeling Winter Spiced Tea

The Winter Spiced Tea is part of our series of seasonal cocktails curated exclusively for the Teeling Whiskey Distillery’s Teeling Tasting Tours. Crafted by our Global Brand Ambassador, Kevin Hurley, this winter warmer is perfect for those long cold evenings this festive season. We hand select a different blend from Wall & Keogh’s selection of organic loose leaf teas for each of these cocktails to create an infusion that captures the flavours of each season.

This recipe features Wall & Keogh’s Put The Cat Out Tea which contains organic chamomile flowers, lime blossom, lavender, mint and liquorice leaves. Wall & Keogh have a selection of over 150 loose leaf organic tea blends in their South Richmond Street tea house.

Teeling Winter Spiced Tea Cocktail
• 40ml Teeling Small Batch
• 10ml Vanilla Liqueur
• 30ml Apple & Cinnamon Simple Syrup
• 20ml Lemon Juice
• 30ml Wall & Keogh “Put The Cat Out” Lavender and Chamomile Tea

Make a weak tea by infusing 1tsp of Put The Cat Out Tea to 150ml boiled water and allow to infuse for 4-5 mins.
Allow tea to cool.
Prepare syrup according to appendix below.
Pour all ingredients into a cocktail shaker and shake vigorously.
Strain into a glass with ice.
Garnish with fresh mint sprig and lemon peel.

Appendix: Apple & Cinnamon Simple Syrup

Prepare 1L batch of syrup by combining 680g of superfine sugar, 2 cups of cloudy apple juice and a handful of cinnamon sticks to a saucepan. Bring to the simmer and allow to infuse for 4/5 minutes until all sugar is dissolved.
